The Roving Tupp Returns! For the first homecooked meal I have prepared in nearly three weeks, I decided to use many of the spices i picked up in Bourj Hammoud, the Armenian neighborhood of Beirut. There were two parts to the dish:
1. Lentils, couscous, ground turkey and kale
Brown an onion and garlic with salt and pepper
Add ground turkey and spice with turmeric, spicy paprika and seven spice
Cook for awhile and throw in many handfuls of chopped kale, parsley and coriander (cilantro)
Finish off with couscous and cooked red lentils; season to taste and finish off with the juice of one lemon
2. Fried potatoes with red pepper flakes and coriander
In my opinion, this dish needs improvement (dicing the potatoes into smaller pieces will probably help). It also took a really long time on the stove top to fry them but that’s the only way to get them oily and delicious.
In some exciting blog housekeeping news, next week will be sandwich week! The 4tupps are going to make their favorite sandwiches or reinterpretations of their favorite sandwiches. We also got news today that a group from The New School in the GPIA office may start their very own 4tupps style lunch club! We love that this idea is spreading and hope to see their take on the collab-lunch soon!
