Tuppin’ off sandwich week is steak, pecorino romano, caramelized onion and homemade arugula pesto. The onions were cooked for about 30 minutes until caramelized, the steak grilled and the bread store bought. I mixed arugula, garlic, cilantro and parsley with salt, pepper, olive oil and mayo to make a thick aoili type sauce. Monday will be a free day since the 4tupps are heading down to Baltimore for a road trip. See you on Tuesday!
