Pizza day is the best day of the week! Today for lunch we had a roasted beet, caramelized leeks and goat cheese pizza. I have to give a shout out to my local pizza shop, San Remo Pizzeria for providing the delicious crust that I was too lazy to make from scratch. The pizza was a success despite my lack of pizza making equipment (wood-fire oven, or pizza stone) probably due to my choice of pre-baking the crust for a few minutes. I roasted the beets in the oven with a touch of olive oil and caramelized the leeks before adding them to the crust along with a fresh tomato, a tad of mozzarella (just to make everything stick) some fresh basil and topped with a sprinkling of goat cheese. I put it back in the oven just long enough for the cheese to melt. The results were delicious!
